Easy Paleo Chocolate Peanut Butter Pie

With Thanksgiving right around the corner and lots of family to visit, I want to share with you all my Easy Paleo Chocolate Peanut butter Pie! I created this recipe while testing out my Easy Paleo Pie Crust!

This recipe is so delicious and easy to make and even better then that…it’s healthy. Oh yes. I said it.

If you are planning on attending Thanksgiving dinner with family or your office plans a dinner party every for the holidays, this recipe is perfect to whip up in minutes and have ready to go. You’ve just got to love no bake pies for that reason!

My family absolutely LOVED this pie and honestly…. I wasn’t expecting it to turn out as good as it did. My husband said out of all the different chocolate pies he’s had in his life (which apparently was over 30!) that my recipe was the best one he’d ever had (good answer dear).

Gathering Ingredients

Okay so, All the ingredients you’ll need for my Easy Paleo Chocolate Peanut butter Pie is:

  • 1 Can Coconut Milk
  • 10oz Dairy Free Chocolate Chips
  • 1/2 Cup Creamy Peanutbutter
  • 2 TBS Maple Syrup
  • 1 tsp Vanilla Extract

If you plan on using my Easy Paleo Pie Crust recipe, go ahead and grab the following ingredients:

  • 2 Cups Almond Flour
  • 2 Eggs
  • 1/4 Cup Melted Coconut Oil
  • 2 TBS Maple Syrup
  • 1 TBS Cinnamon

Making the crust

Start by preheating your oven to 375⁰ and combining the pie crust ingredients in a small bowl. Stir until well combined.

Pour the dough into a pie crust dish and begin working the dough in a circular motion spreading it out evening within the dish. Gently press the dough up the sides as well. Press holes into the bottom with a fork to prevent air bubbles.

Bake the crust for approximately 15 minutes or until the crust begins to turn golden brown. Set aside and let cool.

While your pise crust is cooling, combine the pie filling ingredients in a small sauce pan and turn the stove onto medium heat. Using a whisk begin stirring the mixture as it begins to melt, watching closely to make sure the chocolate doesn’t get too hot. It will begin to clump if you have gotten it too hot.

Once the ingredients are well combined, remove from the heat and gently pour the filling into your pie crust.

Place in the refrigerator for at least 1hr before serving.

This easy paleo chocolate peanut butter pie pairs nicely with your favorite ice cream, whipped cream or even strawberries, but of course it is also delicious all by itself!

Instructions
  1. Preheat the oven to 375
  2. Next combine ingredients together to make your pie crust. Once you have combined your ingredients, gently press the dough into a pie dish working the mixture up along the sides in a circular motion.
  3. Stab the bottom of the crust with a fork a few times to prevent and air bubble from rising, then bake in the oven for approx. 15 minutes or until edges are golden brown. Let cool before adding filling.
  4. To make the pie filling, simply add the ingredients to a small sauce pan and turn the stove to medium/low heat. Continually stirring and watching to make sure the chocolate doesn't get too hot. (It will begin to clump if its too hot)
  5. Contiue stirring ingredients until chocolate is completely melted and ingredients are well combined.
  6. Gently pour your pie filling into the cooled pie crust, smooth it out evenly and place in fridge for at least 1hr before serving.
  7. Slice, top with dairy free whipped cream or ice cream and enjoy!
