Dairy Free Creamy Chicken Soup

Delicious and hearty dairy free creamy chicken soup is a healthy veggie packed soup, filled with all the right ingredients to make this soup a new family favorite in your home. Follow my tips bellow to make this easy any time meal.

We have had a cold, wet and rainy week here in Texas which has forced the kids and I to be stuck indoors…yuk. Well, one of my favorite things to do when I literally have nothing else to do is cook, bake or ferment something in the kitchen. It just helps pass the time while still feeling productive. So after finishing up our left over chicken pot pie for lunch, I went ahead and got started on dinner. On the menu for tonight was Dairy free creamy chicken soup. So delicious, warm and hearty.

This is one of those really simple soup recipes that doesn’t require a ton of effort on your part but will still turn out delicious and filling for your entire family. Lets get started…

TIPS FOR MAKING DAIRY FREE CREAMY CHICKEN SOUP

  • Make your shredded chicken ahead of time to save time on cooking.
  • Use less dishes by cooking the chicken in the Instant Pot, immediately making bone broth and then going straight to making soup
  • Do you have picky eaters in your home? Dice your onion and other veggies up nice and small and they won’t even notice they are there!

INGREDIENTS NEEDED FOR CREAMY CHICKEN SOUP

  • 1lb Shredded chicken
  • 1 Quart bone broth
  • 4-6 Red or russet potatoes
  • 4-6 Carrots
  • 1 Onion
  • 1 head of garlic minced
  • 4 Stalks of celery
  • 1/2 Cup cauliflower rice
  • 1/2 Can coconut milk
  • Fresh Rosemary, Thyme & Parsley
  • Salt & Pepper

COOKING A WHOLE CHICKEN & MAKING BONE BROTH

Like I said earlier, I had made chicken pot pie the night before so I already had some extra bone broth and shredded chicken on hand to make this recipe. But if don’t already have these things ready, go ahead and place a whole chicken in the Instant Pot and cook for approximately 40-60 minutes.

Once you have cooked your chicken, remove from the Instant Pot and place in a bowl to cool. Allow to cool. Remove the meat from the bones and place the meat aside to be used in the soup later.

NOTE* You can also just use chicken breast for this recipe, however for us we find using a whole chicken to be much more cost effective for our family. Plus I am able to make bone broth as well.

After you have removed the meat from the bones, go ahead and place the chicken bones back into that Instant Pot, add water, and cook for about 90 minutes.

OPTIONAL* For added flavor you can also add celery, onion and garlic to the Instant Pot while making broth.

MAKING CREAMY CHICKEN SOUP

Depending on how you have prepared your chicken, rather it be ahead of time or the day of. Begin chopping your vegetables while the chicken and broth is being prepared.

Adding your chopped vegetables to a large sauce pan, sauté for 5-10 minutes in your oil of choice. You can also use butter for this.

Now you can add your bone broth, shredded chicken and coconut milk to your pot. Bring the soup to a mild boil and begin adding in your fresh seasonings, salt and pepper. (I usually do this part to taste, but I’ll leave an exact printable recipe below.)

Allow the soup to simmer over medium/low heat until the vegetables have softened.

Serve hot with fresh parsley, sauerkraut, avocado or bacon on top.

We like to pair this soup with a light salad and homemade almond flour bread to make this amazing meal well rounded and filling.

CAN YOU FREEZE THIS CREAMY CHICKEN SOUP?

Potatoes usually don’t freeze very well, however you could prepare the rest of the ingredients for freezing and simply add the potatoes in when you are ready to use the frozen soup.

IS THIS SOUP HEALTHY?

Yes! By using homemade bone broth and coconut milk, this soup is wonderful for gut healing. Using fresh garlic is fabulous for supporting your immune system and all of the herbs used in this soup offer many benefits as well.

Instructions
  1. (This recipe requires shredded chicken and bone broth. Have these items prepared ahead of time or follow the instructions above to prepare)
  2. Start by chopping your Potatoes, onion, carrots and celery. Add them to a large pot along with your minced garlic and saute with a little bit of oil until the onions become translucent. About 5-10 minutes.
  3. Now add in your shredded chicken, bone broth, coconut milk, fresh herbs and seasonings. Bring to a mild boil allowing to cook until the vegetables are soft.
  4. Serve hot with fresh parsley, sauerkraut, avocado or bacon on top
