Dairy Free Chocolate Peppermint Bark

Dairy free chocolate peppermint bark. Seriously so good.
I’m not usually a hard candy kind of person, but these have become one of my new favorites to make around Christmas time. They are chocolatey, with a subtle taste of peppermint and a little hint coconut. Simply delightful. Really.
They’re also easy to make. Are you starting to notice a pattern with my recipe’s? With 4 kids, I sure do appreciate an easy recipe!
In this recipe I used dairy free chocolate chips, but I do intend to try and make the chocolate bark with cacao powder too, so stay tuned for that.
I like using cacao powder as much as possible because it has great health benefits and I can make my recipe’s even more affordable when I use it vs a $4 bag of chocolate chips. So I definitely intend to find that perfect formula for the bark. But for now, this recipe works too!
Ingredients Needed to make dairy free peppermint bark
I used a 9×12 casserole dish when making this. You can alos use an 8×8 or a size similar to these.
The ingredients you’ll need are:
- Dairy free chocolate chips
- Coconut oil
- Coconut butter
- Maple Syrup
- Vanilla extract
- Peppermint Essential Oil or extract
- Candy canes or peppermint (optional)
How to make peppermint bark
First, place the chocolate chips in a double boiler or a glass bowl over a boiling pot of water and melt until the chocolate is a smoother consistency.
Then pour melted chocolate into a 9×12 or 8×8 dish lined with parchment paper. Place in the freezer for approximately 10 minutes to allow the chocolate to harden.
Next, slightly melt the coconut oil and coconut butter until it is a thick icing like consistency. Add remaining ingredients and whisk together. Take the dish with the frozen chocolate out of the freezer and spread coconut mixture over the hardened chocolate.
Top with crushed candy canes or peppermints. (This is completely optional. It just makes the dish aesthetically pleasing.) Place in the freezer and allow to set for at least 1hr. 2hrs is best.
Once the bark has had time to harden, remove from the freezer and break into pieces. Store in freezer, but not before enjoying a bite!
This dairy free chocolate peppermint bark is great to make for family, but after you taste them you might have a hard time sharing. 😉
