Crispy Cast Iron French Fries

This recipe very well might be one of my family’s favorite side dishes, and because they are so easy to make it might be one of my favorites too!

When making Crispy Cast Iron French Fries, you can really use any kind of potato. If I can find Organic Russet potatoes, I will use those. But mainly I use red potato because I can get them in bulk from Azure Standard.

PREPARING YOUR SKILLET

The first thing you need to do is preheat your cast iron skillet in the oven. I like to set my oven to about 375 degrees, and allow my skillet to reach a hot overall temperature before moving to my stove top. I find this works better than pre heating the skillet directly on the stove top. A nice hot skillet is vital to making crispy french fries!

MAKING CRISPY CAST IRON FRENCH FRIES

While you are pre-heating your skillet, begin slicing your potatoes. There really is no certain amount to use here, just slice however many potatoes you need to feed your family. I typically use about 6-10 small red potatoes or 4-6 russet potatoes for our family of 7.

Once you have pre-heated your skillet, move it to your stove top and turn the burner to medium-high heat.

Add approximately 1/4 cup of coconut oil, adding a little more or a little less depending on how many potatoes you will be frying. You don’t want to completely submerge the potatoes, but there needs to be enough oil to get them crispy quickly.

Allow the coconut oil to reach a frying temperature. To check, I usually touch the oil with a potato slice to see if it begins to sizzle. It is very important that the oil is hot enough, otherwise you will end up with soggy potatoes. Yuck.

Alright, so this next part is pretty self explanatory. Add the potato slices to the hot coconut oil, making sure not to over crowd your skillet. Do not pile the potatoes into the skillet, just add enough to cover the bottom surface.

At this point while they are frying, you can add a little salt and pepper or even another favorite seasoning.

After about 10 minutes, check to see if desired crispiness has been reached by flipping over a couple potato slices in the center of the skillet. They should be a light golden brown. Once desired crispiness has been reached, use a spatula to flip over all of the potatoes. Another key factor here, is only flipping your potatoes once.

Allow to fry another 10 minutes or until golden brown, then using a slated spatula remove from the oil and add to a plate or casserole dish. You can line the plate or dish with a paper towel to help absorb oil, but this isn’t necessary.

Keep adding potato slices and frying until finished. Use ketchup, ranch or your favorite dipping sauce for the BEST (and healthiest) french fries you will ever eat. Enjoy!

DO I HAVE TO USE COCONUT OIL?

I have found that coconut oil works best when frying foods because of its high smoking temperature. Many other oils have a lower smoking temperature which doesn’t quite get the job done.

DO I HAVE TO USE A CAST IRON SKILLET?

In my honest opinion, I have never used a better skillet in my life than a cast iron. They cook so evenly and beautifully, that once you use a cast iron skillet you will never want to use anything else. Yes, you could technically use another kind of skillet, however I do highly recommend giving a cast iron skillet a try!

CAN I MAKE SWEET POTATO FRIES USING THIS METHOD?

Yes! You can also make the most delicious sweet potato fries in a cast iron skillet. Top with a little cinnamon and honey after frying for an extra treat!
